Best Shapton Sharpening Stones: Kuromaku vs Glass Stone

Picked from Amazon listings, not hands-on tests. How we pick

Shapton stones are splash-and-go: they do not need soaking, you spray or splash water on and start. They are hard, cut fast for their grit and dish slowly, which is why they are popular for Japanese knives and woodworking tools. The choice is between two lines. Kuromaku (Ha No Kuromaku, the Pro line) stones are about 15 mm thick and come in a plastic case that doubles as a base. Glass Stones are a thinner layer of abrasive bonded to a glass backing plate, so you get less stone for the money but a perfectly flat, rigid base and micron ratings printed on each grit. Within either line, the usual path is a coarse stone for repair (320), a medium for regular sharpening (1000 to 2000) and a finisher (5000 and above). This guide compares eight Shapton stones and sets not already in our Japanese knife guide.
